2018 Blanc de Blancs
On first pour this wine shows ample but soft effervescence, while the fruit profile is classic Blanc de Blancs — Granny Smith apple, Meyer lemon, white cherry — now a bit candied and toasty with the benefit of a few years in bottle. A nutty, creamy quality comes through on the palate, which is delightfully brisk but not so awash in bubbles as to miss intense minerality and texture from the lees, all of which wrap up in a mouthwatering lemony snap. Open, refreshing, a little salty: This wine is ready for oysters, fried chicken and much more.
