In color, this wine is a pale golden hue. The nose is expressive with aromas of white flowers and tropical fruits. On the palate, the wine opens quickly with a subtle acidity and slight traces of oak which round out the palate. The wine shows good minerality and will be a delight as an aperitif.
Saint-Romain comes from 28 year-old vines facing south by south-west. The grapes for this wine are sourced from the terroir “Combe Bazin”; we work 0.28 hectare out of the 13.56 hectares of this terroir. Because of its orientation, the appellation doesn’t have the same amount of eastern sun like the rest of the Côte; the soils are a blend of limestone and marls with patches of clay. These two factors enable us to magnify its inherent minerality and natural acidity. Made in the traditional Burgundian style – which highlights the grapes’ expression of terroir – the fruit for our 2011 Saint-Romain was hand-harvested then whole-cluster pressed in a Champagne style (a long 4-hour cycle) and gently pressed at low pressure. We settled the juice for 24 hours at a cold temperature before going to barrels, where the wine underwent 100% natural alcoholic and malolactic fermentation. The wine was aged in French oak barrels for 8 months in 30% new oak. After its initial ageing, the wine was racked with its fine lees and aged for an additional 8 months in neutral French oak barrels. Eventually, the wine was racked to tank, fined and lightly filtered before bottling on May 20th 2013.
